there are things in the culinary arena that can be substituted by different ingredients. so if you know a good/better substitute of an ingredient just post it here. there are lots of good ideas around the world and im curious to see what people have come to learn

my contribution is:

ingredient: oil (for baking)
substitute: applesauce.

use in equal amounts in substitution and it makes a recipe lower in fat content plus imo makes the recipe more moist.

It all really depends on what you are making. What can be used as a substitute in one thing may ruin the next. Or just not go well with flavours.

When baking cakes or muffins or cupcakes, you can substitute 1/4 cup of applesauce for each egg called for.

My dad told me that one. I thought he was crazy until I tried it and it worked.
