Does anybody know what time items restock?

it's random, but based on a few factors:
- if it restocks: it's on the hour, so if you were to arrive at 8:55 somewhere, you could wait these 5 mins to get a chance for a restock if you are out
- items that were sold out quickly, will be restocked quicker. 5000 flowers sold in 3 hours? you'll wait just a few hours. 100 armour chest plates were sold after 24 hours, you'll wait quite a long while for the restock.
I heard it was half the amount of time it takes for stocks to be sold out. So if it took 10 hrs for flowers to be sold out, it will take 5hrs to restock from the moment flowers hit zero.
If you're talking about items in the stores - like bricks or beer - they restock every 15 mins (eg 9:00, 9:15, 9:30, 9:45 etc) but not always with the same stock. I find that on average the item I'm waiting for will restock with an hour - so a 1 in 4 chance.
