It says on one of my secondary weapons that it can be held in one hand. Does that mean there's dual wielding? That'd be sick.

there are weapons that are duals, like dual hammers, dual scimitars, dual samurai swords, dual axes, these used to be given for completing a certain education, but since have been removed. Price of duals goes from 450m to 1bn. hope this helps!
There are dual melee weapons, which as stated above were part of the old mission system, you will likely find these at the expensive end as they tend to be a bit more powerful.
In addition there are some dual primary weapons as well, though there only a handful of these around. A list of weapons is available in the help section under 'weapons and armor'.
The dual primaries sometimes come up in the forums but very rarely, I managed to get a hold of a pair of dual bushmasters fairly recently.
By clicking ammo in your item menu you can see small picture of the duals if you select different types and scroll to the right.
