I was recently thinking about resetting my merits to invest them in "Bank Interest", what I want to know is does this work for the Cayman's and how much does the interest go up for each merit spent, any help is appreciated thanks.

Nope, only affects TC bank. Can't remember the increase in interest but it is pretty substantial so worth doing - you'll be receiving over 300m every 2 months for a 2bn investment
It does not change the rate in Cayman Islands. And the interest rate in Caymans is so low that you should count it as "doesn't pay interest". It may be useful for someone with huge, huge networth, but if you don't have $2B in the Torn bank and you don't own all the decent stock blocks, then the interest rate in Caymans isn't high enough to justify it as an investment.
The Torn bank pays fairly decent interest, and the merit point upgrades are worth it, IMO. My current $2B for 2 month investment will pay off $310M, which averages out to a little over $5.1M a day profit.
