When do I know that I can do a higher level crime?
You want to do small nerve crimes until your crime experience increases
As you do crimes your crime experience will increase. It will slowly build up and allow your nerve bar to increase. If you're at say 15 nerve bar, after doing a certain number of successful crimes you will see your nerve bar become 20. This nerve bar is known as the natural nerve bar (NNB). You can add more nerve to your NNB by using merits to allow yourself to attempt higher nerve crimes or do more crimes of the same type.
Also, remember that going to jail hurts your crime experience. I did the 2 and 3 nerve crimes till a few hundred then switched to 4 + nerve crimes (thefts) for about 3000 successful crimes. Now, I have been doing Arson crimes (about to hit 1200) and my NNB is at 30.
