Pig Candy

Candy + bacon = sweet, delicious heart attack death. Bonus usage: if extra crispy, these can be used as a garnish in a bloody mary or a tall manhattan.

Prep time: 5 minutes
Cooking Time: 17-20 minutes

Ingredients:
1/2 cup dark brown sugar
1/8 teaspoon cayenne pepper
1 lb thick cut bacon
1/4 cup maple syrup

Directions:

1. Preheat the oven to 375°. In a bowl, mix the brown sugar and the cayenne pepper.

2. Line a baking sheet with foil and use a roasting rack of roughly the same size as the baking sheet (or smaller), on top of the baking sheet. Lightly spray the rack with a nonstick spray. Place the bacon on the rack, leaving a little room between each strip.

3. Brush one side of the bacon with maple syrup, then sprinkle with the cayenne-brown sugar mix. Flip and coat the other side of each strip.

4. Bake until the sugar is caramelized and the bacon is crisp. Usually about 17 to 18 minutes. Bake longer for extra crispy. Leave the bacon on the rack for 5 minutes to cool before removing.

5. If you want extra crispy and an extra thick coating, you can lightly re-brush and re-coat the down side of the bacon after the top side starts to caramelize (but be careful to not burn the bacon if you do this).

6. Take your favorite cholesterol medication. Maybe invite friends, if you are sharing (or dont).
