Is there anyway to know what the next upcoming race is? In order to set you car accordingly?

There is no way to know what the next upcoming official race will be. You can only know that with custom races.
You can change your car after you have entered any race. Just make sure you do it before the timer is up.
Look at the top left box where your selected car is displayed. There is an option to change it and select a more suitable one for your race.
