Lower their life to 0 before they get you down to 0 life.
Weapons don't really matter unless it is a very close fight. If you are only just losing getting your hands on a good weapon might help, but training your stats more is the best option.
If you are attacking them, a flash grenade might help, depending on how their speed compares to your dex.

Thanks for the reply Cornelius. I am only L8 at the moment but often take on L20's from Baldr's levelling list to gain experience and they seem to mainly use just melee weapons (because they have no ammo?). I have experimented with grenades, they seem to do the trick but don't want use up all my grenades at this stage while levelling up - use them in the battles to come! I am just trying to understand the game details.
