Is there any way I can find out my current stealth skill? If you cant know the exact skill level, can you atleast get an idea of what it is?

Your ability to stealth attack depends on your dexterity, the stealth rating of your weapon used, you getting hit in the fight.
In a fight, you have a stealth meter, a thin gray bar at the left. It starts full and can go down each turn, depending on what happens in that turn. Keep an eye on that when in combat to get a feel for how much actions hurt or preserve your stealth chance

Stealth is based on a your relative dexterity to your opponents speed, the stealth rating of the weapon you use, masked or unmasked armor, and merit points on stealth.
