During the pandemic I picked up a hobby of sourdough bread making. Sourdough is made using a "starter" that consists of nothing but flour and water, fostering bacteria and yeast. Those conditions allow bacteria and yeast to grow. The yeast gives the bread structure, while the bacteria gives it its flavor and aroma. Culling (throwing out) a portion of the mixture and feeding it new flour+water is crucial, since you want to reset the environment before a certain type of bacteria (referred to as the "bad" bacteria) starts to feed and grow.

The good bacteria tends to eat first, at the same time as the yeast. You know this bacteria is present by the signature sour smell that gives sourdough its name. When the yeast feeds, the flour/water mixture rises significantly. When the yeast is done feeding and the mixture is done rising, the good bacteria is usually also almost done feeding. Shortly after the mixture peaks and starts to deflate/shrink, you want to pour out a portion and feed it more. Why? Because as soon as the good bacteria and yeast are done, the bad bacteria starts to be able to feed. You know this one is present because it gives off a spoiled/rotten smell.

Making sourdough bread starts with cultivating this starter, then mixing a portion of the healthy starter with more flour, water, and salt. So, when someone says they're into sourdough, what they mean is that they keep a temperamental zoo of fermenting flour at a specific balance day in and day out.

Most people would say that the smoother the ball, the faster it would travel through the air. They, however, would be wrong in many situations.
