Can someone explain the stats of weapons and armour to me, how much does accuracy, damage and fire rate impact your ability to win a fight. Do any of them matter with high combat stats?

More (higher numbers) is better.
Accuracy and your SPEED = chance to hit
Damage and your STRENGHT = chance to do actual damage if you do hit
Fire rate + how long before you sit there and "waste" a turn to reload.
All of these matter but a level 100 player can smoke you, and me, and both of us together. These things matter when you are fighting players near your level and stats; no amount of equipment is going to compensate for low stats as the weapons and armor bonuses work off your stats.
