What does the different types of ammunition do that you can get from Duke?

You can't Loot ammo from an NPC attack on Duke (see wiki:Lootable NPCs).
So i guess you are referring to Duke Missions.
These ammo types can be bought with Mission credits:

Note that only ammo for weapons you have equipped will spawn.
If you dont have a weapon equipped that can use any special ammo, random special ammo will spawn in duke's shop.
