After the 72 hours, will it automatically come up for me to train someone or do I need something else to train them?

it's up to you to train everyone or particular person, or save the trains and waste it at 20/20
You have full control
A person cant be trained in their first 3 days of employment. After the three days is up, you can go to the "employee" tab. Then click on the person, there should be a button to train them. Its in the same ui that you would assign their salary and position.
You get 1 train per day per star.
So at 1* you'll get 1 train a day.
At 5* you'll have 5 trains per day.
