Boiled egg
eggs are super versatile, easy egg recipes are cooking until heated on a frying pan,
easy medium hard poached or scrambled
otherwise to get a little technical but much worth the effort

I really like making "eggs in purgatory". It's a tomato sauce based dish with eggs cooked on top. Great with toast!
Seconding eggs in purgatory someone else mentioned, i do something similar with cannellini beans and some toasty bread.
