after I levelled 100 Pickpocketing what is the best and next thing to do a crime?

Burglary 

I would recommend just doing them in order and grab as many of the merits associated with them as possible. Check out the guides made by Emforus in the Guides forum. 

EDIT: I just noticed that OP has done hardly ANY other crimes before Pickpocket...Go back, complete graffiti and shoplifting at least, or CE penalties will wreck you on later crimes.  You can still follow the skimming advice below, but don't do anything else until you have finished shoplifting and graffiti (and maybe SfC and Bootleg too!)

PRE-EDIT: You can afford to skip some crimes and return to them later, but I wouldn't skip more than one or two. Burglary is strongly RNG-dependent on its success/failures, so there is an argument to be made for skipping it for now, and returning when your CE is better.

You likely have enough CE to start doing disposal jobs, and since those are time-locked with limited amounts available each day, there is merit in starting those now.  That won't use a full day's worth of Nerve though, so you can likely also try for a second crime too.  

You definitely want to do skimming next as well, though that also won't use all your nerve because a big portion of that crime is just setting skimmers and waiting a long time.  Set 20 for post office or bus station, wait till they get a few hundred details each, collect, and grind up till 25CS.  Once skimming is at 25, set 20 skimmers on gas stations and forget about the crime for a few months.  Your CS will sky rocket in that crime when you later collect the skimmers after waiting for a crazy long time.

Hustling gives some necessary boosts to certain fraud-based OC roles, and it relatively fast to do (also gives a ton of fraud crime medal progression), I'd do that after your gas station skimmers are deployed.

After hustling is at 100cs, and you are steadily clearing daily disposal jobs, I would focus on either cracking or burglary (and make sure to grab the cracking-focused education courses, they are very much worth it, as that will be a crime you return to a lot after you reach 100cs in everything). At that stage, I would at the very least do all of the new daily passwords in cracking one time each. Cracking is also time-locked on job, but you can save passwords indefinitely for later cracking if you have done at least one Crack on it before the date rolls over. Doing this for about a month or two will ensure you have a ton of passwords to crack by the time you do cracking more heavily.

Getting one of the crime-profit scripts is handy, especially for crimes like cracking.  Estimates about the overall $/nerve estimated payout will allow you to be a bit more choosy in where you spend your nerve while doing certain crimes.
