How does that work? What can i do to maximize the gains from this training, for example if I'm in a mine using Rock Salt for DEF gains?

Company specials are worth 4.5e at your highest, non special gym without the effects of happiness or perks. There’s not really much you can do to boost the gains themselves.
You could hold JP until you hit George’s and get the most out of your JPs but since gym gains are exponential it will probably be better to spent them as you get them.
