2/ Bring the lemon juice to boil and add onto the egg mixture, mix properly and then cook it over a double boiler until the curd is thick.
3/ Let cool down to room temp and add the soft butter. Use a hand mixer to mix the curd properly.
4/ Pour into the cool down tart bases and let set in the fridge. Best to let the cur in the tart mature the taste overnight.
Chantilly Thickened cream 300 Sugar 25 Vanilla to taste
1/ Whip the cream with the sugar and the vanilla until nice and firm.
2/ Use a piping bag and tip to pipe the chantilly on top of the curd on the tart
Meringue sheet/shards Egg white 3 Sugar 90 Icing sugar 90
1/ whip the egg white and the sugar together until firm.
2/ Sieve the icing sugar on top of the whipped egg white and then gently fold it in.
3/ Spread the meringue mixture onto a tray lined up with baking paper and bake in 100c oven until the meringue is nice and dry but do not change the color.
4/ Let it cool down in room temperature and then transfer into a air tight container as soon as possible so the meringue to not get soggy.
When serving the tart, add the shard of meringue on the chantilly who sits on top of the tart and use the left over shortcrust pastry to add some "crumble" to the top of the meringue. Add some fresh raspberries for colour/contrast and taste. Use candy cane, cause it's xmass :)
Hi, Through end of the month bookkeeping of my company funds, I realised there was some funds missing. The amount missing is coincidentally the same amount as my daily wage. Would it be possible that it would be in relation to the issue with the server going down and being set back in time and made the company pay the employee twice on that day ?
