Bread and Butter Pudding

Recipe:

Ingredients:
50 g (2oz) butter (approx), softened
6 slices white bread
50 g (2oz) sultanas
3 medium eggs
568 ml milk
50 g (2oz) sugar plus extra for top
Pinch of ground mixed spice

Directions:
Preheat the oven to 180°C (160°C fan oven) gas mark 4.

Lightly grease a 1.1 litre (2 pint) ovenproof dish with a little of the butter. Use the rest to spread evenly over the bread then cut each slice in half diagonally (if possible).
Arrange in the dish, each slice slightly overlapping the last, and sprinkle the sultanas over the top.

Beat together the eggs, milk, sugar and ground mixed spice in a bowl then pour over the bread. Leave to soak for 30min.

Bake in the oven for 45-55min or until the pudding is golden brown but still slightly moist in the centre.

(Optional - if you want a caramelised sugar top on the pudding)
After 35 to 40 minutes remove from oven and sprinkle top with sugar, then return to oven.

Serve with a drizzle of single cream, ice cream or custard.

Notes:
In this recipe you can use up any old bread you have lying around. Ideally, though, not fresh bread. Older bread soaks up the liquids better than fresh will.
Pre-cut loaves will slice diagonally quite easily. Some uncut loaves won't. In which case, just cut in half or leave whole, depending on size. Likewise, if the bread is cut very thick, don't worry about overlapping - just try to cut so you get a flat surface without too many gaps
Whilst soaking, occasionally press the bread down to ensure it all gets covered in the liquid and if it's very hard/stale maybe soak of a bit longer until nice'n'soft.
If you have no mixed spice or fancy something different, a combination of Cloves, Cinnamon, Ginger and Nutmeg works well - adjust quantities to taste.
If you sprinkle sugar on top as suggested, a pinch of nutmeg added to the top with the sugar adds to the flavour.
Don't worry if some of the sultanas look burned, they have just caramelised and taste great.

Well, that was a great race to finish off a brilliant October tournament. Congratulations to all who took part and Lilscotty for his hard work in setting up all the races. I look forward to racing against you all very soon.

Good race guys. Quite a close one, too. Only 18 seconds between first and fifth place. 😊

If we can squeeze in 2 races, how about both?

Torn Racing Championships October ·

Or... all race with the same unmodded car (Lilscotty can choose the car). It'll then be down to racing skill rather than costing points/cash to mod a car up to its eyeballs :-)

I've been taking a look at Google Docs spreadsheet app, comparing it to Excel. It's not that bad, actually. I took Lilscotty's spreadsheet, copied it to Excel, messed around with it and tried exporting it to Google. I think the main difference (so far) is the way it handles scripts. I've published the resulting file if you fancy having a look. I've removed the red not paid/ not racing legend, added a 4th place instead. I've also tallied the total racers per race (more to the point, the number who paid to enter the race) and total points per racer.

Tarted up spreadsheet can be found here:

I'm away for the next 3 days in the middle of nowhere :-) I'm not sure if I'll have internet access. If there's a race in the next couple of days, I'll try to be there. If I can't, good luck racers and I'll see you all when I get back.

Good race guys. Such a pity though that there were only three of us racing.

Never tried being paid to lose before but thought I'd give it a try. Tipsy was offline when I attacked (and lost) but paid up soon after logging in. It was a pleasure doing business with her and I'm sure I'll be losing to her again. :-)
