This guide focus on player company jobs, not city jobs. 99% of the case you should join a player company due to the perks being objectively better than a city job one. For comparison between player company job and city jobs, meckie93 wrote a nice summary here.
This guide aims to give newbie a quick look into companies with quick tags for easy search.
The sections are divided into early, mid and late based on workstat required first, gameplay second. Candle Shop, for example, is a solid mid-game company as well. Clothing Store is a trader favorite and good for late-game warring but have relatively low stat requirement. Pub is just a fantastic all-rounder regardless of which phase you're at but it has mid level workstat requirement and really crowded market.
Classifying based on workstat will help preventing newbie from asking for employment in late-game companies without knowing any better because no one will hire a 1k stat for their Fitness Center or, god forbid, Oil Rig.
Tags explanation:
Training: Good perks for trainings
Premium: Great perks for paying users or someone with the means to maximize their use (requires high expense to fully and consistently utilize the perk)
Income: Perks are good for making money or has decent daily wage
Warring & attacking: Useful for veterans (1b+ stat) to get an edge during combat (newbie should just stay away since you're going to get oneshotted anyway)
Crime: Perk for training your nerve
Energy: Perk for getting more energy, either via more consumables used or just direct conversion from job points. More e means more training, more chaining, more attacking and thus it is extremely valuable.
Education: Perk for getting your edu class done early
Niche: have one or two perk that is exceptionally valuable for some playstyle and meaningless for the rest.
Any perk not highlighted (Bold, Green) is either inconsequential or have better perks in bold that most people would prefer instead. Companies with bolded perk at high star usually mean they are at the high-end spectrum of workstat requirement.

If you're a day 0 account with barely any stat, the most you can ask for is a 7* company in the list below (unless you're a whale, paying for train or restart). For a 10*, around 10k+ single workstat is the minimum requirement. The more popular a company type is, the more workstat you need to have to get into one with decent star.
Most of these companies will not pay you in wages since the perks are your payment. Only the starting company with low or no star will pay you wages (most of the time not worth it). Higher star companies will even tax you if you have shitty workstat. The majority of the case it's not from Director's greed (there's still exceptions, but those directors would struggle to find employee) but on the fact that most high star company for newbie will operate at a loss to keep their star (just check Advertising expense vs. Daily Income) hence the Director need to tax employees or sell trains to barely keep the star.

If you can afford continuous and consistent happy jumps, lots of them, then hands down the best company to do it in (at 10*). If you play casually and only happy jump once in a while, there are better options.
Note:
- I cannot stress this enough: if you're free-to-play and plays casually, only do happy jumps when and only when you can afford it. Otherwise just do 3 xanax 1 refill + natural e daily. Do not skim on that minimum to save for happy jumps, you'll be progressing much slower than those who consistently do 3 xanax 1 refill + nat e. Also, early on you're most likely going to be taxed and not going to be trained for free.
- One way to earn income when you are in a 10* AN is to "sell happy". Basically you get someone who are doing Poison Mistletoe happy jump to pay you for the privilege of sucking the leftover happy after you've done jumping.

Very popular choice for a wide range of players, from free-to-play restarts who know what they're doing to seasoned veterans stacking up job points for attacking events. The main perk they're after is 1 jp for 5 energy at 7* (capped at 100 job point converted in one day). Standard strat is to time the happy jump with 100 job point stacked and you have 500 additional energy for your jump. that's nearly an additional half a happy jump worth of gains. Good alternative for people who jump infrequently. The energy can also be useful in attacking events like Valentine, Eliminations, Dog Tag and Halloween as well. Also, awareness passive for that dream of getting a Stat Enhancer early.

Note: read the Toy Shop note. Also, seriously, the addiction reduction perk is OP. The more rehab you do, the less effective it will be so reducing the amount of rehab you need to do is a very legit long-term strat. Especially if you stick to the standard 3 xan 1 refill per day religiously.

Hands down the most preferred job for whales / people with shady networth growth (we're speaking 30-days old accounts with 10b in networth or 200 days old with 100b+). Basically if you can afford chugging 10-16 cans daily (with 30e cans it's ~50-80m in daily expense just from cans alone), 10* restaurant is the best job because of how much energy it can give you on top of the standard 3 xan + refill + natural e. Just remember to join a faction with maxed e-drink effectiveness perk first. Instead of drinking 12 cans maximum per day like a normal human being, you can drink 16 now, with additional 3e per job point on top. That's a total of 750 extra e per day comparing to 3 xan + refill + nat e. Ever wondered how can some people get 1b stat in less than 400 days? Restaurant and a lot of shady stuffs money, that's how. The perfect job for the 0.01% of Torn citizens.

For people training crime the right way. Multiple perks optimized to boost your CE gain to sky high level. Recommended to do nerve refill on top at 10* Pub when your nerve bar is around 90+ (with faction perk). A 10* pub is pretty hard to get into even with 50k single workstat due to how cutthroat the competition is. The 7* perk is good enough for many to stick around and hope that their pub one day reaches 10*. Good luck trying to get in one during alcohol-boosting event (St Patrict & International Beer Day) tho.

For people training crime but get distracted by short-term monetary gain via the 3* perk. Basically this means less CE reduction for failing a crime, in this case they're doing unsafe but profitable crimes like the 18 nerve Hacking crime (crime 1.0), which is lucrative but if you're low in nnb, it also means settling at 35-40 nnb forever. Also since most good perks is at low star, Meat Warehouse is much easier to get into than a Pub if your workstat is on the low end. For 60 nnb people, FBI hack in a Meat Warehouse is a decent income alternative to faction PA OC and you don't have to fear your OC getting cancelled on your due to factionmate quitting or throwing a tantrum.
Note: Watch out for random arrests. If you're trying out Crime 2.0, this company kinda sucks now until high risk high reward crime gets released later.

Well, not really, all the perks are useful toward one single goal but they are not that OP.
Two main use cases:
1) Bust: You want to get the 11 busting and 1 bail merits quickly or have the busting book.
(2) You wanna join a high level OC team in your faction ASAP for that sweet money and CE.
Either way, make sure to join a Law Firm or you'll be missing out. In case you don't know, busting have a time-gated mechanic: every successful bust will reduce the success chance for subsequent busts, the success chance reduction will decay by half in 12 hours and completely in 3 days, allegedly. Which is why the 5* merit help you fast track your progress by a lot. The background check is also a lucrative service with average demand. The demand kinda went to crap with several tools that estimate battlestats with fairly high accuracy being introduced recently.

Early on, pretty useful perk for getting those special ammo merits. 7* perk is very useful for getting the Peppered merit (more ammo to waste). The most valuable perk is at 5* where you can spy anyone and everyone's loadout for free before you enter battle or drop a DB (if you're that 0.1% of the population). Put yourself in a war and this perk becomes immensely powerful not just for you but for your entire faction.

The 250 races win on one car and 10 driving skill is a pain in the arse to get. If you joined thinking you could make some income by hitting jackpots with a Sierra Cosworth. Well, someone did the math and the income is 440k a day on average. You have better options, really.

7* perk is only for those in Crime 2.0 who like to say "it's fraudin' time" and just fraud all over the place (Cardskimming, Hustling & Scamming crime).

Top tier choice for dex whore at the moment. The 10* perk will see limited use at end-game warring, however, since you're facing mostly GAK or RW primary weapon-equipped opponents. But for mid-game warring, dex whore in a 10* will become a nightmare for most of the playerbase since most tend to neglect their Spd stat and go melee when attacking. The point conversion at 1*, while it is pretty much bottom-tier in any other comp, is okay if you're training with cans and need to top up your happy occasionally.
Also, that moment when you realize that all possible weapons with Plunder effect are melee. Good luck muggers.

The 10* seems to be 5% better than the dex counterpart on average; which could be Ched's solution to balance a bunch of different factors going on such as the difference between Sero & Tyro buff, the 100% mitigation requirement vs. 100% evasion requirement, the amount of alternative company for dex whore vs def whore, etc. This is a top tier choice for def whore until you reach SE stat range, afterward there're some competitive alternatives.

This company leans toward money making. Nine to Five is a solid point sink for newbie to get their workstat up. Concealment and Sex Appeal together absolutely blow Flower Store and Cruise Line out of the water if not for their addiction reduction perk as a saving grace. Oh, Toy Shop? Its corpse is already rotting at the bottom of the ocean. The Simp perk alone would save you 352k/day in upkeep and staff cost at a fully staffed PI.
Best company choice for very, very active flyers, we're talking 8-10 flights a day. If you logs in 2-3 times a day only, maybe consider Cruise Line, Flower Shop or, god forbids, Toy Shop instead.
Note: Considering how competitive LS are and the best perk being at 10*, if your workstat is less than 50k single stat, just go look for employment elsewhere. Even so, most LS have to tax their employee just to barely keep the star.

Used to be a good choice for str whore who actively participate in war due to how flexible it is and how important damage is over accuracy. Now with Crime 2.0 it is a good alternative for beginner crime training (Search for cash, Shoplifting, Pickpocketing, Burglary).
