Choc Ripple 'cake'
1 pack of Arnots Choc Ripple cookies (or similar)
200mL Baileys liqueur (optional)
200 mL whipping cream
½ Tsp Vanilla Essence
? Tbl Spn white sugar

1. Get an electric mixer, pour in cream. Add sugar and vanilla essence. Mix until fluffy.
2. The timely part, get the first biscuit and dip it in Baileys. Then cover one face of the cookie in a thin layer of the whipped cream. Place down on baking paper on a tray.
3. Repeat step 2. but start stacking them upwards until you have used half the packet.
4. Make a second stack the exact same way so they are parallel to eachother.
5. Once all cookies have been dipped in Baileys and have a thin layer of whipped cream between them, lay the two delicious towers down. Side by side
6. With the remaining whipped cream, cover the entirety of the towers. (That are laying down).
7. Finish the remaining Baileys that should be partly crunchy! Yum
8. Once covered in cream, put in the refrigerator for 24 hours.
9. Slice that bad boy open and enjoy!
(Warning,, this is highly addictive and once you have the first slice, you won't be able to stop.)
