I've spent the last week or so opening 500 of each wallet with the express purpose of determining what you will find from each, how often you will find them, and whether its worth the time to open several hundred wallets with manual clicking. This was incredibly painful, tedious, and very unfulfilling - but I did all the work, and I have all the numbers, so I might as well post them here.
TL;DR: I will be going in depth with every wallet, and writing out percentages, but if you don't care about that, or want to draw your own conclusions, you can just look at this screenshot and call it a day. I am NOT an expert, and do not claim to be so. all of this is self reported data from yours truly, and should not be taken as absolute law - just a visual reference.

Short version is this: some of the wallets are profitable if you open them, period. Billfolds are profitable if you open them at scale, which can take over an hour, since autoclicking isn't allowed, and there's no open all button. Coin purses and old wallets are a waste of time, don't bother with them.
Still here? Cool. Let's look at some numbers.
Coin Purses
Current Value: $678
Total Profit: $10,776
Average Profit: $21(!!!)
Profitable item: Driver's License ($3,000 @ Bit's&Bobs)
Verdict: Please for the love of god don't waste your time
Well. That was an hour I'll never get back.

Verdict: Too much time, not enough money
Better rate of return than coin purses, at scale. But not enough to justify opening at scale. You have about a 55/45 chance of turning a profit, but the profit margin is so small that it doesn't really make a difference, even in early game.

Profitable Item: Drugs, Driver's License (sort of) (prices vary)
Verdict: Not worth seeking out, but if you find one, maybe give it a shot
The first interesting wallet. Had the 2nd highest profit return of the 6 (good job!) and is the only wallet type that """reliably""" drops an enhancer - in this case, drugs. Ecstasy in particular is very useful for happy jumping. LSD, Cannabis, and Shrooms also drop, but have varying levels of utility.

Profitable Items: Taser, Pepper Spray, Driver's License
Verdict: Not worthwhile, but kinda fun
Clutches had the single widest spread of items out of every wallet, to the point of being a complete nightmare to open 500 of them because the open another button kept moving. The only wallet that drops weapons. Also drops the largest amount of trash.

Verdict: Just buy the cards, man
Cardholders are probably the most boring wallet here, on account of them holding zero cash. Still, if you're in legal trouble, perhaps opening these at scale is an option - for a very specific kind of masochist. The sheer amount of time it would take urges me to suggest otherwise.

Yeah. Billfolds have a roughly 1/500 chance of dropping a FHC, but even that more than returns a profit on opening 500 of them. Maybe, maybe if you did it at scale, opening hundreds of wallets at a time, it could be worthwhile. Maybe, all that extra time to get a couple of coupons, is worth it to you. I strongly disagree. But that choice is yours.

Thank you so much for reading. The moral of this post is DON'T BOTHER WITH WALLETS! Just buy the items directly and save yourself the headache, even if it's more expensive. There's no universe where saving a couple million on FHCs is worth it for the sheer nuisance of opening this many wallets. I am now over-encumbered with junk, and I need to get it out of my life. The time investment required to open these, to me, greatly outweighs any potential benefits.
If you enjoyed my suffering, maybe rate this post.
P.S. I already sold the FHC, and got immediately buy-mugged. Eh. It happens.
