The Crime tutorial says "The more crimes you do, the more experience you will gain, making it easier for you to do harder crimes."
I just wanted to know if there is any way to tell what your chances of success are for each crime?

Just trial and error really. Theres no other way to know.
The higher your nerve bar, the more crime experience you have, which in turn will increase your success rate for crimes.
