At my job, in the Employees tab, it lists the amount of stars the player has but also has a number under it. In the case of all the employees at my job it says 0 even though there are some 5 star players and we are earning an overall profit. Why is this?

Because it need receptionist position to show how much u make.
secretary position
Some have 0 as they are not placed in front desk job that deals with sales (for my pub is probably bouncer, promoter, cleaner etc). They increase income but are not directly related to the income. If all your employees are $0 and the company still makes daily profit, either you saw wrongly or someone earning has just left the company or a bug has occurred.

Keep in mind there is a certain hidden interaction between these that's not visible.
For instance, someone at the front desk might give in lots of cash, but that could be due to other positions that attract (and keep) customers. so placing everyone at the front desk won't help getting more profit, as you won't have anyone doing the real work.
