Hi, not sure if this is as per design or bug but after completing the Mission that unlocks Medium difficulty missions (Three Peat), I get Medium mission on 1st day after that and then 2nd day after that I get Easy mission.

That's not a bug. You may still get a lower level mission by random or because only lower difficulty targets are available or because of exact mission requirements, etc...
