The Egg will just ask the Potato "Do you even lift bruh?" and systematically 1 shot the potato.
Oh wait... this isn't a fight just how many dishes one can make with each. This is a hard one but I have to give the edge to the egg, as I can think of many more egg dishes than I can potato. I only have 1 potato dish to add to the list above which are Scalloped potatoes. For the eggs I can add many more but here are a few: Eggs over easy, eggs over hard, eggs well done, and eggs in a basket. So yeah.. eggs win in my opinion.
Though it occurs to me that there is a rather delicious indian inspired egg and potato curry....and my potato salad has crumbled hard boiled eggs.....and I often eat the two of them together.
Eggs by a mile. But, they are both "staples" in the kitchen for a reason. Both are extremely versatile, but eggs deffinantly edge out potatoes. In fact, id say the humble egg is THE most versatile ingredient in the kitchen. Potato, flour, butter, and milk are deff #2-5 though
A few egg based recipes i can think of off the top of my head:
Pudding, Custard, Creme Brule, Creme Anglais, Flan, Omletes, Fritata, Quiche, Hollandais, Egg Salad, Hard boiled eggs, Pickled Eggs, Deviled Eggs, Scotch Eggs... and those are just egg BASED foods. Not to mention all the other foods that NEED eggs to be possible such as pastas, cakes, pastries, sauces, basically all baked goods, i mean, the list goes on and on.
It is tough to call,also there are so many dishes that people make that are not wide known, or people come up with the themselves. Also does variations of a certain dish count. I mean like an omelette would just count as an omelette no matter what you happened to add. (there are some omelettes with potatoes but that is a different thing,) Also mashed potatoes would count as mashed potatoes even if you were to add garlic or herbs to it. Though if you were to add those mashed potatoes to a pizza dough and put some cheese and bake it you would have a potato pizza and not mashed potatoes any longer. Also there is a dish I call reversed mashed potatoes, and that is you peel the potatoes, then cut them into cubes.then you put some butter in a pan and then the potatoes, then you pour in some milk put in some thyme and oregano and ten put a lid on it and let the potatoes basically boil in the milk. Now would those be considered their own dish or would they be considered as mashed potatoes.
Also would things like potato pancakes where there are different types like latkes, and german potato pancakes, and polish ones and they are different do those count as different dishes or do the ones with egg get canceled out because they have egg in them.
Though back to the different variations or things with the same sort of name but are totally different. Like German Potato salad, which has no egg, to What is considered potato salad in the U.S. (may be in other places as well.) which has mayonnaise in it which is made with eggs

Also there are a lot of things made with potato flour. Though a lot of the things made with them may have egg. . So things that have both eggs and potato would be ruled out,certain potato pancakes, perogies, some potato cakes have eggs in them.
Though back to what I was saying earlier is it is hard to tell because there are so many dishes with both. Also there are a lot of Indian dishes that have potato in them but no egg. so that adds some ore for potato.
Though think of all of the potato dishes that the Incas, Mayans, and Aztecs would have had that are now lost.
You have to use common sense for the exact reasons you named. An omelette with different ingredients is simply an omelette. Take those same ingredients, put It in a pan and bake, u have frittata. Take those same ingredients, put them in a pie shell and bake, u have quiche. All the same ingredients, differant cooking methods, so they are different.
Take an omelette, keep the cooking method the same, but change the ingredients, and it's still an omlette. You can't make a list of egg dishes, and say "ham omlette, cheese omlette, ham n cheese omelette, bacon omlette", that's impractical. So is adding potatoes or eggs to dishes, simply to say it has egg/potatoes in it for the sake of arguement (ie potatoe pizza lol)
But I mean, think about history... ancient south Americans ate potatoes, but non of Europe did until the 1500s. Eggs have been eaten since the dawn of man (probably brontasaurus eggs, but still lol). It only serves to reason that eggs have been made into more variations than potatoe based on that knowledge alone. Couple that with the fact that egg can be used as an emulsifier, a binder, a leavening agent, and can be the star of the dish, and that puts heavy favor into the egg over the potatoe
its a good debate for sure. i vote potato just because it is my favorite of all time foods. Been a cook for 18 years. The versatility of the potato is a love of mine. And a man can live off nothing but potato and butter. so fun fact
Also, there is a wide variety of potatoes you can use, each with a unique flavour profile. From big Maris Pipers to Jersey Royals. King Eddies to Red Rooster. Cypress to Desiree. Sure you can get eggs from different animals, but most are frowned upon. I might change my ming if I can sample a Komodo Dragon omelette mind...
