What happens if I completely skip one ? How far can I go with only two of them ?
You could go as far as you want as long as the job you want to get only wants those two stats you have.
Is a reliable strategy thou? People do it ?
People don't usually do one single job/company forever...
To unlock revives and spying, youd need at least 2 differant jobs, then you have all kinds of companies that afford you all kinds of bonuses... and all of those differant jobs/companies give differing amounts of stats in differant catagories.
So yea, u can work solely in jobs that build 2 stats only, which could be useful if you wanna quickly (as possible) get into a job like an Oil Rig, but it's simply not practical and would kinda limit your gameplay
You can certainly do it, but if you have 100k end, 100k man, and 0 int, then you're going to be pretty limited in the kinds of job you can do and thus the places you'll be accepted into. It shouldn't really cripple you or anything, but I wouldn't really call leaving one stat in the dirt a 'strategy'. For me it's more like an unintended side effect of having held my current job for so long.
If you skip one you run the risk of not getting into a company you later want to do. There are merits for getting work stats over 100k. Other than that I think it makes [some] sense to have at least a little bit of them all...

I think you are best off to focus on your primary work stat and get it as high as possible. That's what employers are going to care about.
Jobs only look at two stats, and those are broken into primary and secondary. The secondary isn't nearly as important to them anyway, plus it's always much lower (about half) compared to the primary. And the third stat doesn't matter a bit.
Every company type needs people with various skills. If you have 150,000 in one stat, 75,000 in another, and near 0 in the third, you're going to be wanted a lot more than someone with 75,000 in all three stats.
The only reason to care about your third stat is for the merit point at 100,000. Considering how long it will take to get your first two stats over 100,000, I wouldn't make it a priority to keep balanced work stats.
