Slow-Cooker Cowboy Beef and BBQ Bean Sandwiches

Ingredients
2 medium onions, sliced
2-pound beef boneless arm roast, trimmed of fat
1 can (16 ounces) baked beans
1/4 cup barbecue sauce
1 teaspoon finely chopped jalapeño chili
12 onion kaiser rolls, split
1 1/2 cups prepared coleslaw

Steps
1Place onions in 3- to 4-quart slow cooker. Add beef. Top with baked beans and barbecue sauce.
2Cover and cook on low heat setting 8 to 10 hours.
3Remove beef from cooker; place on cutting board. Shred beef, using 2 forks. Return beef to cooker and mix well. Stir in chili. To serve, place 1/2 cup beef mixture in each roll and top with 2 tablespoons coleslaw.

Ingredients
2 tablespoons butter or margarine
1/2 cup chopped onion or 2 tablespoons dried minced onion
3/4 cup chopped green bell pepper
1 lb hot dogs, sliced
1/3 cup chili sauce
1/3 cup ketchup
1 to 2 tablespoons packed brown sugar, if desired
1 can (15 oz) baked beans or pork and beans, undrained
1 can (7.5 oz) refrigerated buttermilk or biscuits
3/4 cup shredded Cheddar cheese (3 oz)
1 cup corn chips, crushed
3 tablespoons grated Romano or Parmesan cheese

Steps
1Heat oven to 375°F. In 10-inch skillet, melt 1 tablespoon of the butter over medium-high heat. Add onion and bell pepper; cook and stir until tender.
2Add hot dogs, chili sauce, ketchup, brown sugar and beans; stir gently to mix. Reduce heat; simmer 2 minutes. Spoon hot mixture into ungreased 11x7- or 12x8-inch (2-quart) glass baking dish.
3Separate dough into 10 biscuits. Separate each biscuit into 2 layers. Arrange 10 biscuit layers over hot beef mixture. Sprinkle with Cheddar cheese. Arrange remaining biscuit layers on top to cover.
4In small bowl, mix corn chips and Romano cheese. Sprinkle over biscuits. Dot with remaining tablespoon butter.
5Bake 20 to 25 minutes or until biscuits are golden brown.

Ingredients
1 lb. lean ground beef
1 (1-oz.) pkg. Taco Seasoning Mix
2/3 cup water
1 tablespoon oil
1/2 cup chopped onion
2 garlic cloves, minced
1 can (15 oz) black beans, drained, rinsed
1(10-oz.) can Enchilada Sauce
1(4.5-oz.) can Chopped Green Chiles
1/3cup sour cream
7 or 8 Flour Tortillas for Soft Tacos & Fajitas (from 10.5-oz. pkg.)
4 oz. (1 cup) shredded sharp Cheddar cheese
2 to 3 oz. crumbled chèvre (goat) cheese
1 cup Thick 'n Chunky Salsa
3 green onions, sliced

Steps
1Heat oven to 400°F. Brown ground beef in large skillet over medium-high heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently. Drain.
2Add taco seasoning mix and water; mix well. Cook 2 to 4 minutes or until mixture is thickened, stirring occasionally.
3Meanwhile, heat oil in medium saucepan over medium heat until hot. Add onion and garlic; cook and stir 3 to 4 minutes or until tender. Add beans, enchilada sauce and green chiles; mix well. Bring to a boil, stirring occasionally. Remove from heat. Stir in sour cream.
4Spoon ground beef mixture down center of each tortilla. Roll up; place seam side down in ungreased 12x8-inch (2-quart) baking dish. Spoon bean and enchilada sauce mixture over filled tortillas. Sprinkle with cheeses.
5Bake at 400°F. for 8 to 12 minutes or until cheeses are melted and casserole is thoroughly heated. Spoon salsa down center of casserole; sprinkle with green onions.
