What type of pie depends on the season, especially which fruits are ripe. Where some types of pies are summer pies and some are fall or winter. Then some are anytime.
I used to work in a pastry shop. (so I have made thousands of pies. Though what I was going to say is we got Key Lime juice in a large bucket. Where the juicve smelled a bit like skunk but not in a bad way.
