Obviously your networth goes down by 500K because you don't have the item anymore.
But let's say, a week later, the item now costs 400K, does your networth increase by 100K because the item doesn't cost as much anymore or does it stay the same because you already ate it?
If the second answer is correct, does that mean everyone's networth is slightly inaccurate?

Your networth is automatically calculated according to the item's current market value. Were the item still in your inventory, you'd see a decrease in your networth due to the price decreasing. It updates constantly and automatically.
Since you ate it, it's no longer considered as part of your inventory and as such does not contribute towards your networth. This applies to all consumable items.
TL;DR: You ate it, networth stays the same, what else did you expect?

His networth is now $10, reduced by 50c because of reckless apple eating. About a week later he notices that Apples cost 40c each to buy. He kicks himself for not waiting a week to buy an apple. His networth is still $10.
Consuming an item has the same effect on networth as sending it to someone, or dumping it. Doesn't matter what you paid for the item, or if you got it for free, your networth will be reduced by whatever the marketvalue of that item is at the time you consumed/dumped/sent it.
After u eat or use it, it is gone. Whether the item value goes up or down, if the item no longer in your inventory, bazaar, pending trade, or cabinet, it is gone. You can track and test yourself using tornstat. Also no need paying ppl in Q&A forum. A simple thx n some up votes are appreciated usually
Let's say that you didn't eat it, and then it drops in value for 100k and automatically your networth will drop by 100k and now consuming it will bring it down by 400k, that's 500k total, same if you eat it before it drops in value, it changes nothing
Bizarrely I guess if you ate it then it’ll end up passing through your digestive system, so you will end up having a number 2 [insert local nice term for a poo here] so will require toilet paper and your net worth will decrease by that amount too, or am I overthinking things ?
You're basically confusing yourself. If you ate a doughnut that costs less a week later. Do you think the money gods will give you your money back or do you think the shop you bought it from will say: OH! here's a great idea, let's give this person back his money!!
Or do you think because the doughnut hasn't been digested by your body it's still counts towards your networth?
