I am in education right now and want to know if i quit, i will lose any points i wont use?

Nah, from what I heard the job points you earn from one job stays with you when you change jobs. You can't use them for other jobs though. Army points are army points, educ points are educ points. They can't be used across jobs.
You can keep it to use later but each company/starter job points can only be used for same company/starter job. IE, edu is for edu. Medical is for medical.
If you have finished in edu and want to go to medical, imho use all edu job points to pump your job stat to have the job stat needed to be brain surgeon:
Manual: 2600
Intel: 10.000
Endurance: 4000

Yea, the job points stay with the company type you're in, so for the city jobs, if you quit, the points will stay there and if you go back to education, you'll have that same amount of points. If you go to medical, you'll either start at 0 if you've never worked there or have what you had left from the last time you were in medical.
Once you start joining companies, the points stay with the type of company, so if you join say an adult novelty shop, then leave, you can join a different adult novelty company and you'll have the same amount of points you had when you left.

Also important notice about companies is that you can use your job points only three days after joining the company. Even if this is "old" job points. Keep that in mind

Well, from what I read you’ll get a any where from 1-3% of the company bank. However, if they hold a SYS stock block, it’ll block your attempt. So it’s kind of hard to say if someone has the stock or not...

If I reached the Level of Principal in Education and then left to do Medical but after reaching GP realise my INT Intelligence:5,538 is going up way to slowly.
Can I go back to Education and be at a Principal again for the perk (spend the job points on the +100 Intel per 10 Education Points every 2 days) or do I have to start from the bottom again in Education?!?
The same question also applies to my Medical - if I quit at the Position of GP (to boost my INT up quicker elsewhere) and then come back to Medical will I still be at that position of GP immediately I do I have the slow grind to get back up (even if all of my stats are high enough)?
