Just wondering is there any way at all to find out who’s stealth hospitalizing you or is it impossible to figure out. Is there a certain stat I can invest into to lower their chances for of getting away? Anything helps tbh. Difficult being a merchant being stabbed every time online by someone you can’t track.

High speed / defense will help you unstealth them. Also, keep an eye on the faction chain page and whenever someone starts attacking you tell a factionmate to join the fight against you so that it becomes a group attack, thus it doesn't get stealthed
Take a look next time you start a fight , on the left side of your attack screen youll see a faint grey vertical bar (I missed it for ages , took someone else pointing it out for me to see it) thats your stealth bar.
Your ability to stealth depends on a multitude of factors but the main ones are your Weapon Stealth value , your Dexterity in comparison with theirs and how few turns it took you to defeat your opponent.
If you are constantly being stealthed by the same individual (Really no way to tell if it is or not) you can assume that individual is defeating you in few attacks , Has higher dexterity than you and/or is likely using a stealth weapon.
The only fool proof way to avoid being stealthed in fights is to start pumping your defensive stats (Def & Dex), Defense stats will let you withstand more hits in a fight thus increasing the amount of turns itll take for that individual to defeat you and eventually youll have the defensive stats to reveal your attacker.
However , As stated above a great way to reveal who it is thats attacking you is to have someone else join the fight on you at the same time that person is attacking you, Itll reveal who is in the same attack as them (Your attacker).

1. Pay sluts to sit on your profile. Like slutting but instead attacking he just sits and do nothing until time out
2. Always keep your health bar full. Open attacking page against your friend on other fab. Make sure the friend doesn't get hosped or travel. When you see your health is dropping quickly start attack on your friend.
3. Ask your friend to sit on your profile. Once he sees your health is dropping he can join fight.
Ps: Those are my ways. I rarely check ppl who attack me during weekend or event tho. I understand everyone needs chain target on those days. I also attack anyone I can attack during those times. So quid pro quo. So if you get attacked during halloween, this probably the reason?

You can use a light weapon mod to lower their stealth, put it on your secondary, and then put all your attack settings sliders to 0 and secondary to 100.
Working in a 5* Hair Salon will lower their stealth too.
The only guaranteed way is to turn the attack into a group attack, using one of the methods described in other answers.

Update: What if there’s like several people are just stealth hospitalizing. This is basically how my day goes.
1) Sign on through mobile app.
2) Do captcha.
3) Run to faction to deposit income money. It’s not much but they mug me clean by morning.
4) Run to the gym (If not hospitalized already)
5) Run to crimes and spam whatever. (If not hospitalized)
6) Run to the work screen to use the points I have accumulated overnight to boost stats.
Everything from step 3 and below barely happens because I’m sitting in the hospital for four hours or so. Like all the suggestions so far is awesome! But I can’t even do the captcha to sign in before they see my status symbol turn green and I’m in that screen to select the number.

You can med out of the hospital to continue your daily chores. Once you get your stats up a bit, the attacks starts to taper off. Also, keep as little money as possible on you, if you're profitable they'll keep you as a farm target.
I second this advice. A goal could be to try to make it such that if you get mugged, they get way less than they would have selling a loss. The low end of that market is 250k. From what I've seen, the breakeven for that mug amount is around 3mil.
