Why do people fly for them?
Because they're worth money as they can be traded in for Points which are used for various things.

I know they have value as a set but I can out 3-400 Teddy Bears a day on the Item market and sell out. Where on earth are they going? More importantly to me, why?
Out of all the items you can buy abroad they are generally the ones with most profit.
But why? There are thousands available per day.

Because a game about crime has to have something to offset all of the darkness so people have a way to apologize or court (you can get married here, after all). Thus, plushies and flowers.
If you don't have a plushie or a flower you keep because of the situation in which it was given to you, well, that is a very unfortunate circumstance.

You can trade in flower sets and plushie sets in order to get points from the museum. (Museum is unlocked with a bachelors in History).
These points are high sought after because they are consumed very quickly. People use them to buy things like a bazaar, racing license, stock ticker, and most importantly daily refills (both energy and nerve). Due to the rampant use of points through the previously mentioned formats, they are something that are just always being readily bought and sold. Also as points are generally a stable price (more or less), some choose to store large amounts of money in the form of points because they do not need to rely on having it in a faction bank or vault, and it is safe from mugging. Points also sell very quickly compared to most items in the game that you can use as a form of money storage.

There's circa 40k daily users here, so in turn there is quite a large economy for trading. A lot happens every minute in torn, thousands of items get consumed, lots of energy is used, lots of purchases are made.... Etc

i see you are level 14 and as such cant travel items from torn stores that are consumable sell at a profit on the item market as you can only buy 100 items a day whole sets of flowers and plushies get traded at a high volume to create points hence the high margin if you stalk bits and bobs you can make a larger profit from beer for the 3 to 4 seconds it takes to sell out after every tick xx:00 xx:15 xx:30 xx:45
