Since the recent introduction of 2 new stocks/companies in the stock market, there are currently 32 of them.
In certain texts however, it still states the old 30 number.
Examples:
City
"The TCSE is a market in which shares of 30 companies based in Torn can be bought or sold. The companies often offer very special bonuses for large investors."
Stock Market Tutorial
"Here you can invest your hard earned money in the different Torn corporations under the TCSE 30. Each corporation will offer a special bonus if you own a certain amount of shares in them; however this is often hundreds of millions of dollars worth."
