Is there a way to keep the Easter eggs in their current form if you want them for the display case?

nope, not likely.
They will remove them from your display case like what they did for the different variant of gaming console and rename them as 1 item.

I'm sure with all the coding you could have something whereby if they are in the case they stay as they are but as soon as they are removed they revert to the new item.
Next year you probably can place all the new, untradeble ones in displaycase

After the event they are changing them all to 1 item, like they did with the consoles. Check the newspaper article, The end of the Easter Eggs is nigh.
They are not changing it before november.
