Ingredients
For the Dough
3 2/3 cups all-purpose flour (440g) plus more for dusting
1/4 cup granulated sugar (50g)
1/4 cup light brown sugar (50g)
1 tsp salt
2 1/4 tsp instant yeast 1 package
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp nutmeg freshly grated if possible
1 tbsp orange zest optional
1 egg large, room temp, lightly beaten
1 cup milk (240mL)
1 tbsp vanilla extract (15mL)
6 tbsp unsalted butter (85g)
2/3 cup raisins or mixed dried fruit
For the Egg Wash:
1 egg
1 tbsp cream
For the Cross:
1/3 cup all-purpose flour (40g)
1/4 cup water (60mL)
For the Glaze:
3 tbsp vanilla extract (45mL)
1 tbsp apricot jam (15mL)
1 tbsp water (15mL)
Instructions
For the Rolls:
Zest the orange and set aside then place the raisins or other dried fruit in a bowl and squeeze half of the orange's juice over them. Toss and warm in the microwave for about 45 seconds. The juice will help plump them up and infuse with flavor. You can also do this step with dark rum if you prefer. Drain before using.?
In a separate bowl add the mil and butter. Microwave until warm to the touch (about 110F) then stir in vanilla and orange zest. ?
In the bowl of your stand mixer add the flour, salt, spices, and sugars and yeast then whisk together to combine and set aside. ?
Attach a dough hook to the mixer and pour the wet mixture into the dry then run on low. Pour in the lightly beaten egg in while the mixer is running, then sprinkle in the drained raisins and mix until the dough comes together. It's ready to knead when it's tacky to the touch but won't stick to your fingers. ?
Dump dough out onto a floured surface and knead for about 5 minutes, sprinkling with additional flour as needed. The dough is ready when it's springy to the touch and has a nice smooth texture. Transfer to a large oiled bowl. Cover and allow to rise in a warm place. This is a very enriched dough so the yeast will take a bit of time to get going but the dough will more than double in size.?
On a lightly-floured surface divide the dough into about 14 equal pieces. If you're weighing on a scale then they'll be around 2.5oz or 70g.?
How to roll rolls: Pinch together the corners of your portioned dough then place the pinched side down on a clean surface so the stretched side is facing up. Cup your hand around the dough and move in a tight circular motion.?
Place the rolls on a parchment-lined baking sheet OR in a large baking dish allowing a little under two inches for the rolls to expand. You can group them more closely in a baking dish if you'd like them to be more of the pull apart rolls with soft sides.?
Cover with plastic, foil of a clean damp cloth and allow to rest in a warm place for about one to two hours for a final rise where they'll almost double in size. Make the flour paste while the rolls are rising.?
Once risen heat oven to 375F and brush the rolls with the egg wash, which you made by whisking the tablespoon of cream with an egg.?
To make the crosses
Whisk the flour and water in a bowl until smooth. You'll want a thicker pipe-able paste so add more flour or water if needed for the correct consistency.?
Transfer the Flour Paste To a piping bag and snip the tip off then pipe crosses onto each of the rolls. ?
Bake at 375F for about 25 minutes or until lightly browned on top. If your rolls are getting a bit too brown at the 20 minute mark then cover loosely with foil and continue to bake. ?
Heat the apricot jam and Strain into a bowl then whisk in the vanilla and water. Brush the glaze onto the warm rolls then enjoy!?

Okay, everyone scarfed down the pie, I just had this one little piece left to take the picture . . . then I finished it off . . . so Heavenly Good, I think even I can become Resurrected ! ! !

Pie Dough / Crust / Pastry This is the Best, Easiest Period!
INGREDIENTS
2 2/3 cups All-Purpose Flour
1 pinch Salt
½ teaspoon Baking Power
9 ounces sweet VERY COLD Butter cut into approximately ½ ounce pieces
2 large cold Eggs
1/4 cup sugar for a sweet crust, omit for savory
INSTRUCTIONS
Makes enough for 2 Pies?
In the bowl of your food processor, add the flour, salt and baking powder, blend a couple second to mix. Scatter the COLD butter over the flour and process for 7 to 10 seconds until coarsely mixed. Beat the egg quickly and blend for a few more second until it looks like wet sand. DO NOT OVER WORK!
If too dry, beat another egg and add a little at a time or just grab some of that Vodka out of the freezer, and a splash at a time, in between shots, that is!?
Create a disk without too much handling, wrap with plastic film and refrigerate for at least 30 to 45 minutes. Take the dough out and let rest another 15 to 30 minutes to let it get to room temp again!?
Flour your work surface (I like to use bread flour for this so if you have some, otherwise regular all-purpose flour work well) generously and roll the dough into a 12 inch circle or about 1 ½ inch larger than the bottom of your removable bottom mold.?
Fill the mold with the dough making sure to press gently on the sides. Do not cut the excess yet the dough yet as it will shrink. Cover and refrigerate for about another 30 minutes. ?
Before baking cut off the excess dough on the edge. Cover the entire surface of the dough with parchment paper and top the paper with uncooked beans or rice.?
Bake for about 25 minutes or until the dough start turning light golden brown.?
Remove the beans and the paper and brush the dough with an egg white and bake for another 5 to 10 minutes until the entire surface is dry and light golden brown. ?
Take out and you are now ready to fill the dough with anything you like!
INGREDIENTS
PIE FILLING:
3 cups chopped fresh or frozen rhubarb (1/4” slices)
1 cup quartered strawberries (can do 2 cups)
1 cup sugar
3 tablespoons all-purpose flour
Dash salt
1/4 teaspoon freshly grated nutmeg (* * * okay, now, we can’t be friends if you use that jarred pre-grated stuff, sorry, just saying!)
3 large egg yolks
1 cup heavy whipping cream
MERINGUE:
4 teaspoons plus 1/3 cup sugar, divided
2 teaspoons cornstarch
1/3 cup water
3 large egg whites, room temperature
1/8 teaspoon cream of tartar
Directions
1. Make dough above.
2. On a lightly floured surface, roll out dough to fit a 9-in. pie plate. Trim to 1/2 in. beyond edge of plate; flute edges.
3. Place rhubarb in crust. Whisk the sugar, flour, salt, egg yolks and cream; pour over rhubarb. Bake at 350° until filling is set and the pie jiggles when gently shaken, 50-60 minutes.
4. Meanwhile, in a small saucepan, combine 4 teaspoons sugar and cornstarch. Gradually stir in water. Bring to a boil, stirring constantly; cook until thickened, 1-2 minutes. Cool to room temperature.
5. In a small bowl, beat egg whites and cream of tartar until frothy. Add cornstarch mixture; beat on high until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved.
6. Spread evenly over hot filling, sealing edges to crust. Bake until meringue is golden brown, about 15 minutes. Cool on a wire rack for 1 hour. Store in the refrigerator.
Créme Anglaise
INGREDIENTS
Yield: About 2½ cups
1 cup whole milk?1 cup heavy cream?
2 plump, moist vanilla beans, split lengthwise, pulp scraped out (once again, you may use vanilla extract, but vanilla beans are best, plus yo get that wonderful caviar floating in the sauce!)
?6 large egg yolks
?½ cup sugar
PREPARATION
Step 1? Bring milk, cream and vanilla bean pulp and pod to a boil. Cover pan, turn off heat and let rest for at least 10 minutes, I do for 1 hour.
Step 2? Fill a large bowl with ice cubes, and set aside a smaller bowl that can hold finished cream.
Step 3? Whisk yolks and sugar together in a heavy-bottomed saucepan. Whisking constantly, drizzle in one-quarter of the hot liquid. When yolks are warm, add the rest of the liquid in a steadier stream. Remove pod, return pan to medium heat and, whisking vigorously, cook cream until it thickens slightly, lightens in color and reaches 180 degrees. Alternatively, you can coat a wooden spoon with cream, then draw your finger across it; if cream doesn't run into the track you have created, it's done.
Step 4?Immediately remove pan from heat, and allow cream to rest for a few minutes until it reaches 182 degrees. Strain cream into the small bowl, set bowl into ice bath, add cold water and, stirring frequently, cool completely. Cover cream and chill, if possible for 24 hours.
