Check the Crimes 2.0 forum guide on skimming, it breaks down averages based on a large amount of player-collected datasets.
The TLDR version is that each skimmer location has a varying degree of speed and risk. The faster ones tend to get discovered more frequently, and the slower ones can safely be left alone for days, weeks, or even longer.
