Recipe:
250 grams of saikoro beef cubes (let them reach room temperature, sprinkle with salt/pepper to tenderize, and let rest for 20 minutes until the water is released, then pat dry with a tissue).
4 large milk tofu pieces, cut into 8 parts, fried until crispy without seasoning.
1/2 onion, finely chopped.
5 cloves of garlic, finely chopped.
2 scallions (white parts only), finely chopped.
2 tablespoons of black pepper sauce (e.g., Saori brand).
2 tablespoons of oyster sauce.
2 tablespoons of unsalted butter.
2 tablespoons of sweet soy sauce.
1/4 teaspoon of white pepper.
1/4 teaspoon of powdered shrimp paste.
1/2 teaspoon of beef stock powder (e.g., Masako).
A sprinkle of brown sugar
1 tablespoon of sesame oil.
180 ml water.
1 teaspoon of cornstarch/ maezena flour
How to Cook:
1. Sauté Aromatics:
Sauté the onion, garlic, and scallions with a little oil (just a bit—saikoro cubes are naturally oily) over low heat until translucent or golden.
2. Cook the Beef Cubes:
Add the saikoro cubes and butter. (Yes, I know people usually sear the cubes first, but I was lazy and hungry.) Fry them until they brown.
3. Add Seasonings and Sauces:
Add the seasonings and sauces to the pan.
4. Cook the Seasonings:
Stir and cook until the seasonings are well-blended and aromatic.
5. Thicken the Sauce:
Add the cornstarch slurry (mix the cornstarch with a little water beforehand) and stir well until the sauce thickens.
6. Taste and Adjust:
Taste the dish and adjust the seasoning as needed.
7. Serve:
Serve with rice and a sunny-side-up egg.
