I pocketed some hollow point and piercing Ammo. Should I save it for the next holiday or just use it up?

Use it. There are also merits to be earned for using a certain amount of special ammo from each category.
You can also buy special ammo from the credit shop after doing missions. You could save the ammo from wars if you like to make it easier, but no reason to save for a year
There are merits from using 2500 of each type, so you could use them now towards those - or keep them for when they will make a difference.

I pick pocketed mine from the postman.
save it until you reach the requirement for the merit so you don't have to recalculate everytime.
once you have the merits, probably use it on real war or tough mission targets or maybe save it for collection
Other than for the merits I only use tracer and incinerate. Piercing is not bad but not worth the effort unless you know you need. Hollow point is junk, just do the 2500 for the merit. It can at times not totally suk but too few to bother with.
