Yes, all holy texts say things like that. The main question here is:

Did the religion itself change and modernize as time passed?

Some did. Others did not. Let's take Christianity as an example.

The large majority of christian nations have underwent a process of secularization. The church retains none or very little sway over the government. Thus, they no longer oppresively enforce christianity upon their citizens. (As such, state mandated executions for some silly thing like blasphemy or being gay no longer take place)

Now let's contrast that with islam. Islam has remained virtually unchanged throughout its entire history. It went through no period reform or modernization like other religions have. Most Islamic countries, with a few notable exceptions, have their judicial systems governed entirely by islamic jurists. Who base their judgements on sharia law, which is derived from the Quran and hadiths.

I hope you can see that is a serious issue.

Don't you see the geopolitical differences between for instance the Middle East and these places. The west has put many of these religious extremists in power, look at SA for instance.

Islam isn't a race, and Christianity doesn't teach killing unbelievers.  Regardless of the past crimes of certain denominations, the Bible does not teach killing unbelievers.  The passage you quoted was to a specific people at a specific time in history and was never interpreted at any time by either the Jewish or Christian faiths as a general or universal command.

As for the second passage, that never applied to Christians, only to Jews living in the nation of Israel, and was ended in practice by the 2nd century AD.  You cherry pick a single passage but you don't see the legal framework behind the passage.  In order for these executions to be carried out, there has to be Jewish theocratic courts with jurisdiction in Israel.  Even the modern state of Israel doesn't qualify as it's a secular government.  Furthermore, simply parsing this verse ignores all the requirements of evidence/proof.

The modern secular doctrine of freedom of religion was never designed to empower the government to penalize civilians for expressing their opinions and views about religious issues.  It was designed to prevent the government from penalizing people for their sincerely held religious beliefs.  Furthermore this was never intended to overrule any other rights of men, such as the right of young women not to be sexually enslaved to middle aged men, or not to be graped, or the right to eat bacon, or own a dog, or even the right to life.

In other words, if we choose to accept people into our society who believe in killing those who don't follow their religion, we are not under any obligation to allow them to kill us in the name of that religion, nor to hide our bacon or dogs.

There are obvious limitations to freedom of religion.  For example, if I started a new religion and a core tennant of that religion was that every time I passed by a government employee, I was religiously obliged to punch them in the face, clearly that wouldn't be allowed.  And if my cult gained followers and there started being a lot of government employees getting punched in the face, society would have evidentiary reason to believe that adherents to my cult posed a real threat to government employees.

Neither society nor government is under any obligation to tolerate that.  It would not be unjust to outlaw that portion of such a religion and if adherents to the faith continued making attacks even when it was outlawed, it would not be unjust to codify enhancement charges to penalize that behavior until that behavior was entirely eliminated or exceedingly rare.
