Hellooo! I wanted to share one of my favorite recipe with you and it is really easy. I don't like zucchini and this is the only way i eat it! 
Give it a chance and you will love it!

Ingredients:

2-3 zucchini

Half cup of feta cheese
2 eggs
Half cup of flour(4-5 tablespoon)
2-3 green onions
Parsley
Salt + black pepper



1. First, peel the zucchinis and grate them. Sprinkle pinch of salt and wait a few minutes to release the water.
And squeeze out as much liquid as possible using your hands.(it makes it crispy)



2. In a large bowl, mix everything. Grated zucchini, eggs, flour, chopped green onions, parsley, feta... and add salt and pepper



3. If you want to be creative add anything you want, I also like to add red and green bell peppers, different cheeses, dill and sometimes olives too! The batter should be a little thick, if it is still too runny add little more flour or remove the liquid with a spoon.

4. Add some olive oil to the skillet and heat it, if its hot that is good so it doesn't stick to the pan. Drop spoonfuls of the mix into the hot oil and gently flatten each one with the back of the spoon.



5. Fry each side 2-4 minutes until they are golden brown and crispy!!

6. Add your favorite dipping sauce to the plate, mine is garlic yogurt sauce. So goood!!!!!
