I have a doubt what happens to the item which we sell in city shop? Like assume there is a product whose circulation is only 1000 imagine if 1 person gets that item & he can sell in city shop so after selling what happens to that product specifically like is that product lost forever? Or does it spawn in city map?

Everything sellable to shops is all pretty much low value junk, so that scenario isn't even really possible. It just goes back into the system. Nothing happens with it, it's not that elaborate.
But bro there are items like uncut diamonds, turtle shell & raw ivory which we sell in item market & maybe they are valuable?
I wouldn't consider something with a sellback value of 240k "valuable" but that's subjective. Either way, the whole point of the NPC shops is a system buyback. The item just goes away. Nothing happens with it.
It disappears from circulation, but there are more produced overseas, and possibly on the map.
General items, such as Plushies, Flowers, and more (including your example, Uncut Diamonds, Raw Ivory, etc) disappear from player circulation when sold on City Shops. But, they also add back from City Shops or Aboard Shops. You can think of it as the City Shops export the items back aboard for them to restock, if you really need an imagination to understand.
