I'm a bit confused on leveling up. What exactly gives experience? Is there any way to farm experience? If so, what ways would you recommend? (I know this is a bit of a noob question, but I was curious. :) )

I have completed all of George's missions and was told that there should be more missions after. Am I missing something? Have I made a boo boo? I have looked through other posts about missions, but they don't really have the answers I'm looking for. Could anybody help?
