Now, because you got lucky or spent who knows how much nerve to get burglary to lvl 76 as a total newbie, which you should put to the achievements part of the forum probably, you do not believe us and ask what gains you will get doing easier crimes.
The answer is simple. You will avoid critical fails in later crimes, you will get merits, you will get experience. These are the real gains. If you still do not understand such simple logic, then we can't help you in fact.

Merit says "Hospitalizing - Increases hospitalization time by 5%"
Wiki says "Merit upgrades. Each level of the Hospitalizing branch increases your outgoing hospital time by 5%. (maximum 50%)."
Does this apply to hospitalize action only, or also to the leave and mug options hospital time? Does the merit increas all hospital time, no matter what method we use?

Well... randomness is in fact based upon very large numbers of events... so your two events or mine several hundreds of events are not really proving anything... probability is a b..ch ;)

It is up to you to decide your path... as for example I have 7/10 at pistols, as I like my assassinate Cobra... Would it be it really good for you? Only you can tell...
Also I would suggest for newbies to use the chain saw for the first year, to get the 100 mechanical weapon finishing hits, as mechanical weapons are not really used too much...
If you want to do 99k happy jump just for the merit, the cheapest option is usually a Diabetes day at November. You still need to be at faction with 48h consumables cd and 50 % candies gain. And have some expensive candies. If all goes well, you need fully equipped PI and 67 pixie sticks to reach 99k with one ecstasy, which is like 25m now, I would wait till halloweek where prices of expensive candies shall go down.
