I went through a bunch of the guides for flying and have one remaining question. How do people "predict" whether or not an item will still be in stock when they land? For example, right now, Panda Plushies in China has a stock of 1,105. Is that a reasonable number for making the multi-hour flight? How do I know what a good stock level is for each country based on travel time? I know this might vary based on peak playing times and all but are there general guidelines for this?

I tend to estimate there should be over 3k Xans remaining before I fly for SA, I would imagine Pandas might be similar.
I recommend getting TornPDA on your phone; it has a section that shows stock and average restock times and will estimate if the product your looking for will be in stock when you land. From there just err on the side of caution and you’ll rarely have a problem.
edit: stock times -> restock times

Once you know what is there, then it's just trial and error. Obviously you would want more items to be available for a longer flight and yes peak times make a difference.

ArsonWarehouse is an excellent site. You can go to the guided mode tab, it's got a pretty accurate estimate of what will be left when you land.
YATA
clicking on the quantity left will show a graph of the last 24/48 hours of stock so you can see how fast it runs out to know if it will still be there when you arrive.

one thing to keep in mind is that stock will refill itself in roughly half the time it took to sell out, so depending on how quickly things are selling out you can fly as a place runs out of a thing and it'll restock before you land, for the longer trips in particular this is an important thing to get a good feel for. Also check places that sell more than one plushie+flower (i.e. UK sells 2 different plushies, switzerland sells a plushie and a flower) as even if one is sold out you'll make roughly the same profit buying the other. Also yata abroad is great as Indy has linked, the one I used when I flew
There are many factors in determining if an item is there. One of them is how fast you can get there. A PI with an airstrip is the fastest way to get there without being in a 10* Lingerie Store.
If you're running plushies, it's all luck because in all countries plushies sell out quickly, which you can see with Yata.
If you're running flowers, it's a bit more simple. Say if an item is sold out, it takes about 2 +/- hours to restock. Example 10k flowers in China before you take off is a good bet. Or if they have been sold out for over 1 hour. If the amount shows 1k flowers in China, don't bother flying.
The wiki will show you flight times/costs to each country based upon which property you're in. You can literally study Yata's stock records to see when is the best time to fly with the amounts shown.
Events, ranked wars, and dirty bombs will throw off how fast an item sells out. The longer it takes for an item to sell out, the longer it takes for it to be restocked.

Predicting restocking used to be a much bigger thing, as there were fewer active players and it could take hours of waiting for stuff to be restocked, and if you landed in china for instance and there was nothing to buy it was usually smarter to just take the loss and fly home. Nowadays there are a lot more travelers and I think a short wait is usually enough, except maybe for japan that only has one profitable item.
Yep, just bring as little cash you can get away with, ie maybe you need to sit at location while at work. Just factor in mugs in your profit schemes. Bring enough for flowers, by plushies if can.
How does the Guided Mode work? I first thought that the green bars are for when it is predicting the item to be in stock, but it seems to be completely wrong. For example, in China right now it is saying the flower should be out of stock, but the other mode says there are over 2K left. Plushies are wrong too. It has half of a green bar for the current time but it literally just restocked.
I've never used the guided mode. That was someone else that mentioned it.
