Christmas has never been about reflection, forgiveness, or remembering the birth of Christ. This festival has and will always be focused on the excessive consumption of food and alcohol to the point where a second nap of the day is required around 2pm. To that end, we’d like you to show us what you’re baking and making for the holidays by contributing some edible items to our Festive Feast contest.

Your culinary creations can be baked, fried, or stone cold if you like. All that we ask is that they are made of something a human being can eat, be it savoury or sweet. You can enter a simple cake, a batch of intricately decorated cookies, a large meat sculpture of the Pope, or a haute cuisine masterpiece that wouldn’t look out of place at a Michelin star restaurant. RiceWilly’s winning 2021 entry is exactly the kind of thing we’re looking for. It looks like a turkey, but it’s a cake!

Bibingka
Traditional Christmas rice cake of filipinos.

INGREDIENTS


Yield:6 servings
  • 2cups/320 grams rice flour
  • ½cup/55 grams glutinous rice flour
  • 1tablespoon baking powder
  • 1teaspoon salt
  • ¾cup/150 grams granulated sugar
  • ?cup/76 grams unsalted butter, melted, plus more melted butter for topping, and butter for greasing pan
  • 1½cups/355 milliliters coconut milk
  • 3eggs, lightly beaten
  • 1banana leaf (optional)
  • 1salted duck egg, sliced (optional)
  • 1cup/80 grams grated queso de bola or Cheddar cheese
  • ½cup/52 grams grated coconut, for topping (optional)

PREPARATION


  1. Step 1
    Heat oven to 350 degrees. In a large bowl, whisk together rice flours, baking powder, salt and sugar. Make a well in the center and pour in melted butter, coconut milk and eggs. Whisk mixture until smooth.
  2. Step 2
    Wash and dry banana leaf, if using, and line a 9-inch cast-iron skillet with it. (One leaf should be enough, but if more are needed, make sure to overlap leaves so there are no gaps.) Butter the leaf, and trim edges leaving a 1- to 2-inch overhang. Alternatively, generously grease skillet with butter.
  3. Step 3
    Pour mixture into skillet and bake 15 minutes. Remove from oven and top with salted egg and cheese. Return skillet to oven until bibingka is golden and browned, and a toothpick inserted in center comes out clean, 20 to 25 minutes more. Brush with more melted butter and sprinkle with coconut, if desired.

Puto Bumbong (cheese overload)
Traditional Christmas purple rice cake of Filipinos.

Ingredients



  • 1 1/3 cups sticky purple rice
  • 1 1/3 cups glutinous white rice malagkit
  • 2/3 cup long grain purple rice
  • 6 cups water for soaking the rice
  • 3/4 cups muscovado sugar
  • 1 1/2 cups freshly grated coconut
  • 1/2 cup softened butter

Instructions



  • Combine all types of rice in a large mixing bowl. Pour water. Soak for 2 days.
  • Drain the water by pouring the contents of the bowl into a large sieve.
  • Put the soaked rice in a large food processor. Start to grind the rice until it becomes very fine. Note: It took me around 10 minutes to achieve this consistency.
  • Fill your puto bumbong steamer with water halfway through. Apply heat and then let the water boil.
  • Meanwhile, fill each bumbong (bamboo tube) with powdered rice. Note: Do not compress the rice so that steam can pass easily.
  • Once the water starts to boil rapidly, arrange each bamboo tube on the steamer. Continue to cook until steam comes out of the tube.
  • Remove the tube from the steamer. Arrange the contents over a piece of banana leaf. Spread butter all over and then top with freshly grated coconut and muscovado sugar.
  • Serve. Share and enjoy!

My daughter and I spent yesterday making gingerbread as she wanted to create some festive gifts for her teachers before the end of term.

I'm my head this is what they would / should look like (generic internet image)

Submission 1:

Went into this competition thinking baking was easy, and now have a new found appreciation for people who specialize in baking.

Consider this my best attempt at making an energizing cake that can be consumed after getting food coma from the rest of your meal

Recipe:

Since this was my first time ever baking something, I decided to keep it simple. Its a French vanilla cake with a vanilla frosting and a substantial amount of torn influence.

Best served with Securop's Overdose Insurance and a side of a Maxed Toleration Branch

Giving myself a review after eating it:

Appearance: 4/10

Taste: 8/10

Energizing: 98%

Moisture: Moist

Foreword:

Considering how quickly I went from confident to happy I was evenly able to finish this project, im proud of the result. Does this mean im going to bake again? Probably not I will leave that to my family and relatives who are the real pros

I have a few idea's for two more food items I can do that will hopefully turn out better than this so ill update my post when I figure out how to do them

Submission 2:

After heading back to my parents place for the holidays I was told that my first attempt was not christmassy enough. So in an attempt to make something more Christmas themed (and better looking) here is the most christmassy themed item I could think of

A GINGERBREAD HOUSE!!!!

And before someone says theres no torn influence I would like to present this:

This recipe is sure to leave you wondering how the hell your meant to eat this thing, and eventually with you tossing it when it goes stale after a few weeks.

TORN creme brulee

2 c (454g) heavy cream 2 Tbsp (10g) ground coffee 1/2 tsp fine salt 1/2 c (100g) sugar 4 egg yolks 1 tsp vanilla extract

1. Heat heavy cream, coffee, and salt over medium heat until it comes just below a boil. Remove from the heat and let steep for 20 minutes.2. Add sugar to a medium pot set over low heat. Stir gently to even out the cooking and cook until it reaches a light amber color. Turn off the heat.3. Slowly strain in the coffee cream. It will bubble up, so add just a little at first and then finish with the rest. Pour into a separate bowl or cup and let cool until only slightly warm.4. Add egg yolks to a medium bowl and slowly pour in the coffee caramel cream. Stir constantly to ensure that the egg yolks do not cook. 5. Finish with the vanilla.6. Divide between 6 ramekins set in a 13in x 9in baking pan.7. Place the baking pan in a pre-heated 325F (163C) oven and fill about a third of the way with hot water.8. Bake for 25 minutes or until the custard wobbles slightly when tapped.9. Remove from the oven, let cool on the counter for 20 minutes, and then at least 4 hours in the fridge.10. Top with a thin layer of sugar and brulee with a torch or using the broiler setting on your oven.

So The Bogie wanted me to make him a Cristmas Treat, I ain't got the time to be faffing around in the kitchen, when there's a whole Christmas Town full of goodies out there to explore !.. But I wanna do something to show I got Christmas spirit, and not just the stuff that comes in bottles. So I went to my pantry and grab the first things I saw..

Clotted Cream, Vanilla, Caster Sugar and Syrup. I can fudge something up with this I thought.. So I mixed um all togther in my slow cooker and boiled the s@*t out of them, stiring every now and then.

After about 4 hours the mixture looked a nice brown colour, the same colour as my coat. So I turned off the heat and gave it a good stir till it cooled and thickened.

I then poured it out into a lined tin, and stuck it in the fridge to set.

When it was set, I turned it out and chopped it up into little squares and stuck it on a decorated plate to make it look all festive like.

Miyko, one of the town's beloved confectioner, was known far and wide for her extraordinary Christmas creations. Each year, she unveiled a new delight that left the townsfolk eagerly anticipating the holiday season. This year was no exception, as the word spread like wildfire about Miyko's latest masterpiece – the Grinch Lollipops.
These delectable treats were a fusion of sweetness and mischief, inspired by the mischievous Grinch who had once tried to steal Christmas. Miyko's Grinch Lollipops were a sight to behold, a true embodiment of Christmas magic. As the townsfolk entered Torn's Sweets Shop, they were greeted by the scent of fresh apples mingling with the irresistible aroma of melting chocolate.
The Grinch Lollipops were a labor of love for Miyko. She carefully selected the crispest apples, slicing them into thick rounds that served as the perfect canvas for her Christmas enchantment. I made a white chocolate and green Christmas Tree. I used luster dust to make is sparkle and added ornaments. Some os them I lusterdusted as well .The red balls (that's right I said balls) I used luster dust and cute little sprinkles . I fought of the fatties in my house but making them cookies and buying them nuts! I may not be able to hold them back much longer. They are salivating.
