In a fight when you connect your hit but your opponent misses their turn you get the escape option on top right corner of the attack screen. A small person running icon.
Escapes cost so much because they are harder to do. You have to hit your opponent but your opponent has to miss (opponent using non damaging temps like pepper spray or flash grenades also count as miss). Even then you may not be able to escape if your opponent have high stats. Basically most of the time you cannot escape the strong opponents (where you actually need to escape) and you can easily escape weak opponents where you don't need to escape.
A higher Dexterity helps. If it is your top stat, you get the option to leave more often when it is actually of benefit to do so (instead of taking a L).
to run away more often = speed

Merits for it too, I've got the 50 not sure how high the escape merits go tho. Be interested to know if any veterans have the answer
Speed doesn't help you escape lol. To be able to run away, they have to miss you and to escape successfully they have to miss twice. Which is dependent on dex or a very low accuracy weapon.
Pepper spray and a wind-up melee makes it easier for people to escape from you. I think that's how many grind the merits.

The update on escapes from 7 years ago describes the mechanic pretty clearly. Also makes it pretty obvious that Dex helps you escape (by avoiding the attack on the relevant turn) and speed helps block escapes (by landing the attack on the relevant turn). Wiki should be updated on the link from Dede as that's clearly a confusing presentation of it / wrong. I'll reach out.

for merit purposes you need to buy and sell escapes, for losses you only need to buy them
losses are best done by noob players who don't quite understand the value of energy so its very easy to buy them at cheap prices like 300K or even less
buying and selling escapes are best done with 2 players who are closer together in stats so by the time your looking to buy/sell escapes most people understand the value of Energy more by this point so thats why escapes are more expensive + if you sell escapes you can turn around and and use that $ to buy some so its not really costing you anything other than the Energy used
The back to basics is an old page, with questionable accuracy. Speed improves the odds of you hitting others, and dexterity improves the odds of others missing you. Your own speed doesn't play any role in escapes, since you need to evade them to escape, not hit them.
The escape button becomes available when the opponent doesn't damage you in the previous turn. When you click the escape button, it uses up a turn. In that turn, if the opponent is able to damage you, your escape attempt fails. If the opponent doesn't damage you in the escape turn, you successfully escape
Escapes sell for high amounts because setting things up so that escapes are successful is finicky, and it requires more effort than just having people attack you and die.
